At the End of a Stressful Day

The last day of February was very stressful for me. I think I sat on my chair for only 20 minutes and spent the rest of the day going around the office… finishing urgent tasks. After a long day at work, I went inside the car, sighed, and said to myself “I really need to eat something good.” So, before I went home, I dropped by the mall near our place and bought myself a hot bowl of sinigang, a cup of rice, and a glass of cold, buko juice.

The next morning, I still had a hangover from the stress I experienced at work and I found myself craving for more “comfort food”. I decided to cook my favorite seafood (shrimps) and hoped that it would somehow help me relax.

After preparing the pasta with shrimps, my mom saw the dish and said: “Wow! It looks good! How did you make it? Did you use fresh tomatoes?” I replied, “Yup! I used the last few cherry tomatoes from the plant.”

I said “the last few” because my Cherry Tomato plant started to dry up a few weeks ago due to the extreme summer heat and lack of water in the afternoon. But thankfully, despite its condition, it was able to produce the finest and juiciest tomatoes since the first day it had fruit. Surprisingly, the last few tomatoes I was able to harvest were bigger compared to the previous batches.

It reminded me of how incredible our God is. Indeed, it was only by His grace that the plant grew its best fruits when it was already dry and weak. I also noticed a small green cherry tomato growing on the plant after weeks of not seeing new ones. It gave me hope to continue taking care of the plant and helping it bear more fruit because I know that God can make it grow.

In the same way, I realized that although we may experience heavy, tiring, and stressful days (just like what I experienced last February), God still remains to be in control and He knows exactly what we need — always. Because of this, we can continue to find hope in Him as we trust that He is able to help us get through each trying moment.

Last Friday, I wanted to tell God: “Please don’t let me go through difficult and stressful situations today.” But in the process, he changed my heart and encouraged me to ask Him to help me grow through my circumstances instead, whether or not they were difficult/stressful. He kept on assuring me that I just have to keep on doing my best and to continue finding my joy and strength in Him.

Before my February ended, my colleague (who was with me and who also experienced the same stress and challenges at work that day) told me this: “I was thankful to God that you were my partner in overcoming this because you were still positive even though you were stressed.” And I immediately replied that it was only by God’s grace.

I also shared to her a verse that I read that Friday morning before going to work. Psalm 28:7 says “The Lord is my strength and my shield; my heart trusts in Him, and He helps me.” It was such a timely encouragement!

Sometimes, we may not always understand why God allows us to go through stressful moments in life. But there is comfort in knowing that He will always cause things to work together for the good of those who love Him, who have been called according to his purpose. (Romans 8:28). In my case, I thank God for the last day of February this year, because my colleague and I were able to experience his grace and were given the privilege of thanking Him together at the end of a stressful day. :)

RECIPE for the Creamy Marinara Pasta

Ingredients:

Spiral/Penne pasta noodles

Seafood (I just used shrimps, but you can use squid and clams too)

1/3 cup of Milk

Spices (Salt, Pepper, McCormick’s Italian Seasoning, fresh herbs, 1 green chili (with 1/3 of its seeds) )

5 diced/semi-blended regular tomatoes and 8 cherry tomatoes

3 tbsp. butter

1 tbsp. olive oil

1 garlic head

Half an onion

Grated cheese

 

Steps:

  1. Clean your seafood. Slice, if necessary, and season with salt and pepper.
  2. Using a mortar and pestle, crush the shrimp heads to get more flavor while adding a few tablespoons of milk.
  3. Slice onions and crush the garlic cloves.
  4. Heat the oil and butter in a sauce pan.
  5. Once the oil/butter is hot, sauté the onions, garlic, and chili.
  6. Add the tomatoes and stir well. Season with salt and pepper.
  7. Add the spices and the milk with shrimp “extract”.
  8. Add the shrimps and cook for 2-3 minutes on both sides. Stir the sauce until well-combined.
  9. Add the rest of the milk, if necessary.
  10. Add 5 tablespoons of grated cheese (or more) while stirring.
  11. Serve with cooked noodles and enjoy!

 

Simple Sunday Snack: Chili Shrimps

A few weeks ago, my sister, my mom and I watched episodes of Gordon Ramsay’s Ultimate Cookery Course at home. One of the things that I appreciate about his show is his authenticity as a chef. He confidently and humbly shared his tips and recipes which inspired me to continue learning and growing in the kitchen. This morning, I decided to apply a lesson I learned from him when I made a shrimp dish for lunch: “Learn to balance flavors. Don’t be afraid to use chili!”

I don’t know why, but cooking with chili isn’t a usual thing for me. In fact, I only started to like chili in college when I discovered how good it was when paired with steamed siomai (which were sold in the kiosks near the MRT and LRT stations). So, today, I used green chili with my shrimp scampi, for a change. Surprisingly, I liked the idea! After eating a bowl of shrimps with my mom and sister, I even told my sister: “I think I’m going to make shrimp scampi with chili ALWAYS!” Hahaha.

I enjoyed it so much that I regretted how I didn’t use chili that much before. If it wasn’t for Gordon Ramsay’s cookery course, I wouldn’t have considered using chili in my dishes. It made me realize how it was similar to missing out on blessings and wisdom when I don’t intentionally spend time with and learn from God, who knows EVERYTHING. If I am able to enjoy learning from simple cooking instructions by a world-renowned chef, I can just imagine how awesome it would be to continue learning and growing more from God’s Word. :)

Indeed, I shall do so by His grace, one step at a time.

RECIPE

 Ingredients:

Half a kilo of shrimps

2 tbsp. of herb butter

1 tbsp. of olive oil

6 cloves of garlic

1 green chili (I used one, without the seeds. But if you want it to be a bit more spicy, you may include the seeds and/or add another chili.)

Salt & Pepper

1 tbsp. of fish sauce

1-2 tbsp. of water

 

Steps:

  1. Rinse and remove the shrimp heads from the body. Set aside.
  2. Remove the veins of the shrimps.
  3. Season the shrimps with salt and pepper.
  4. By using a mortar and pestle, crush the shrimp heads with water.
  5. Heat herb butter and olive oil in a pan.
  6. Slice the garlic and green chili. Add to the pan.
  7. Cook the shrimps for 2-3 minutes. Add the fish sauce and the shrimp heads’ sauce.
  8. Serve and enjoy!

Simple Sunday Snack: Shrimp Kebabs

I wasn’t feeling well when I woke up this morning because of my feverish body and sore throat. Even though it was more convenient for me to stay at home, rest, and listen to the message online, God still encouraged me to get out of my bed and go with my siblings to church. On our way out after the service, we bumped into friends and spent time talking with them. It was interesting because after spending time with them, we walked to another area (on our way to the car) and bumped into another group of friends. And this happened again and again and again. At that time, I honestly felt like I was going to faint, but by God’s grace, He gave me the strength to walk, talk, and even go home with my siblings.

Despite my condition, I praise God for allowing me to go to church today. It was encouraging to be reminded of acknowledging God’s presence in our lives even in the way we handle our money and it was nice catching up with our friends too! I sincerely thank You, Lord!

When we got home, I started preparing Shrimp Kebabs for our additional late lunch/snack. For this simple snack, I wanted to include some of the red, cherry tomatoes growing in our veranda. And because there were more than 15 ripe cherry tomatoes in the plant, I asked my siblings and mom if they wanted to help pick fruits with me. Surprisingly, they all agreed to help!

I then washed the tomatoes, cleaned the shrimps, prepared the spices/marinade and grilled the juicy kebabs!

While I was grilling the shrimps, God reminded me of my situation earlier today; of how I was so weak (and sick) at church while I was spending time with my siblings and our friends. Usually after each service, we would go straight home. But today, I noticed that God gave me opportunities to be intentional in spending time with my siblings and our friends while I had a weak and feverish body.

Also, He allowed my siblings to help others in need (e.g. My brother did his best to assist a few guys who were having trouble starting their car in the parking lot; my eldest sister helping a new friend with her passion for education and ministry). Even at home, God encouraged me to bond with my brother, sisters, and mom (who were at home at that time) by simply picking fruits at our veranda!

I then remembered what Ptr. Peter Tan-Chi said in one of his sermons: “Love is to seek others’ highest good, which often times require our sacrifice.” Once again, I’m learning that life isn’t about me and my comfort. It’s about loving God with all of my heart, soul, mind, and strength… even when I’m sick and weak; even when I don’t feel like loving; even when it means that I should love others too. I shouldn’t let anything hinder me from loving Him sacrificially because He deserves every beat of my heart and every drop of love within me. He deserves the best love I can ever give!

Luke 10:27 says: “You shall love the Lord your God with all your heart and with all your soul and with all your strength and with all your mind, and your neighbor as yourself.”

RECIPE: Shrimp Kebabs (with Cherry Tomatoes)

Ingredients

Shrimps

Cherry Tomatoes

Spices (salt, pepper, cumin)

Butter/Olive oil

Fresh Basil leaves

*Other vegetables/spices you can add: Onions, bell pepper, garlic, oregano, rosemary

Steps:

SHRIMPS

  1. Rinse. Remove the head (set aside) and the shell of the body.
  2. De-vein the shrimps and place in a small bowl.
  3. In the small bowl, add a tablespoon (or two) of melted butter or olive oil and a pinch of salt and pepper. Add diced fresh basil leaves.
  4. In another small bowl, squeeze the juice out of the shrimps heads and mix in a pinch of cumin.
  5. Combine the spiced shrimps and the mixture of shrimp juice/flavor and cumin.

TOMATOES

  1. Rinse the cherry tomatoes.
  2. Add a pinch of salt and pepper.
  3. Drizzle a tablespoon of olive oil on the tomatoes. Mix

Push sticks through a cherry tomato and shrimp alternately. Grill for 1-2 minutes on each side. Serve with basmati rice or toasted, sliced baguettes.

Getting Past Your Past

Before watching the movie, Les Miserables, I told myself that I wouldn’t cry even if a lot of people, who already watched it, did. However, halfway through the movie, I was already looking for tissue in my bag because the tears kept on rolling down my cheeks. Indeed, the story moved me and gave me a lot to think about. In fact, one of the things in the movie that struck me the most is this recurring theme: GRACE.

For the past months, I’ve been learning about God’s grace more frequently and it has always been a humbling lesson for me. I even remember God reminding me of grace when I recently made Calamari at home. :)

It all started when I was cleaning the large squids with running water. The first thing I did was to slowly pull out the “bag” of ink that was inside the squid’s body. However, after pulling the bag out, a lot of ink flowed down my hands, which made it more difficult to handle. But, with the help of running water, I was eventually able to clean and prepare them for the next steps.

I set the squids aside and further rinsed my ink-stained fingers. Then, I carefully peeled their outer skin and threw it in the garbage bin.  At that moment, I remember enjoying my large squids because they looked so clean! They were ready to be sliced and cooked. They were ready to be Calamari!

I began to slice one squid ring after another and before I knew it, I had a bunch of white, ink-free, slippery squid rings on the chopping board. God then took that opportunity to speak to me. The two, large squids that I had needed to be free from their own bags of ink, before they could become the Calamari that I desired them to be. And this wouldn’t be possible if I didn’t take the time to carefully rinse them with running water.

In the same way, God showed me what was in my heart and revealed to me certain things from my past (hurts, sin, discouragements from failures/mistakes, wrong sources of security/happiness, bitterness, etc.) –– my past “bags of ink”, that I was still carrying. God showed me how they were hindering me from becoming the best me that He desires me to be.

And I did agree with Him. I knew that my heart had (and still has) a lot of room for improvement, especially when it comes to letting go of my past hurts and mistakes and being able to surrender every thought, feeling, and decision to God.

It says in 1 John 1:9

“If we confess our sins, he is faithful and just to forgive us our sins and to cleanse us from all unrighteousness.”

It was encouraging because, at that time, He not only pointed out how I can improve more as His child, but He also comforted me with His faithfulness and grace in my life, in spite of who I am… and in spite of who I was.

I think that being reminded of God’s grace is one of the major reasons why I cried when I watched the movie, Les Miserables. The movie showed how God’s grace changed the heart of a sinner and how this sinner extended that same grace to the people around him. If it were not for God’s grace, Jean Valjean (the main character in the movie) would not have been able to experience freedom from His past mistakes and hurts and experience being transformed into a better man for God.

“But he said to me, “My grace is sufficient for you, for my power is made perfect in weakness.” Therefore I will boast all the more gladly of my weaknesses, so that the power of Christ may rest upon me.” -2 Corinthians 12:8-9

Indeed, God’s grace is more than sufficient for us. No past is too dirty for God to forgive, cleanse, and renew.  And no life is too messed up for God to change and use for His glory. :)
